Nicole Rubenstein, MS, RD, CSSD, CDCES
Nicole Rubenstein, MS, RD, CSSD, CDCES is a Colorado-based Registered Dietitian-Nutritionist with a lifelong passion for sports nutrition, sparked by her experience as a snowboard racer on the U.S. Junior National Team. After earning her Nutrition degree from Cornell University and completing her dietetic internship at New York Presbyterian, she launched a diverse career spanning clinical nutrition, private practice, and elite sports nutrition. Nicole holds a master’s degree in Sport Nutrition from the University of Colorado and specializes in working with both recreational and elite athletes—including those managing medical conditions—to improve performance through personalized fueling strategies. Her advanced certifications include being a certified sports dietitian and a certified diabetes educator. Outside of work, she enjoys mountain biking, snowboarding, cooking, and spending time with her dogs, Sol (pronounced Soul) and Woody.
